Ingredients

  • 4 hard boiled eggs
  • 3 tbsp oil
  • ¼ tsp black mustard seeds
  • 1 stalk fresh curry leaves
  • 1 medium onion, finely sliced
  • 4 cherry tomatoes, crushed or finely chopped
  • 1 tsp ground coriander
  • 1 tsp red chilli powder
  • ⅛ tsp ground turmeric
  • ½ tsp salt

Step by Step Method

  1. Heat the oil in a heavy-bottomed pan over medium heat.
  2. Add the black mustard seeds and let them crackle for about 10 seconds.
  3. Add the finely sliced onion and fresh curry leaves. Cook until the onions turn light brown.
  4. Add the ground coriander, red chilli powder, and ground turmeric. Cook for 10 seconds on very low heat.
  5. Add the crushed or finely chopped cherry tomatoes and salt. Mix well. Cook covered on low heat for 10 minutes until the oil rises to the surface.
  6. Gently add the boiled eggs and mix them into the masala.
