Tender Chicken Kebabs marinated in Fresh Herbs and Spices. Perfect with buttered garlicky Naans or as a side dish to your favourite curries.
Ingredients:
600gm boneless chicken, diced large
2 tbsp ginger and garlic paste
1 tbsp ground white pepper
1 tsp salt
50gm cheddar cheese
10 fresh green chillies
50ml double cream
1/2 tsp ground mace
1 tsp ground garam masala
100gm fresh coriander
50gm fresh mint
1 tbsp corn flour
1 tbsp oil
Method:
1. Marinate the chicken with the ginger and garlic paste, white pepper and salt. Set aside for 15 mins.
2. To a blender, add the cheese, green chillies, double cream, mace, garam masala, coriander, mint and oil. Blend to make a coarse paste.
3. Add this paste along with the cornflour, to the marinated chicken and mix well.
4. Arrange the chicken on a greased baking tray and cook in a hot preheated oven 240°C fan for 15mins until the chicken is slightly charred on the outside.
5. Enjoy with a fresh yogurt dip, lemon wedges and sliced onions.
