Hariyali Chicken Kebabs - Green Herb Kebabs
Vibrant green kebabs bursting with fresh herbs and spices! "Hariyali" means green in Hindi, and these kebabs get their beautiful colour from fresh coriander, mint, and green chillies. They're juicy, flavourful, and absolutely delicious!

Ingredients (Serves 4-5)
- 600g boneless chicken, diced large
- 2 tbsp ginger and garlic paste
- 1 tbsp ground white pepper
- 1 tsp salt
- 50g cheddar cheese
- 10 fresh green chillies
- 50ml double cream
- ½ tsp ground mace
- 1 tsp ground garam masala
- 100g fresh coriander
- 50g fresh mint
- 1 tbsp corn flour
- 1 tbsp oil
Method
1. Marinate the chicken with the ginger and garlic paste, white pepper and salt. Set aside for 15 mins.
2. To a blender, add the cheese, green chillies, double cream, mace, garam masala, coriander, mint and oil. Blend to make a coarse paste.
3. Add this paste along with the cornflour, to the marinated chicken and mix well.
4. Arrange the chicken on a greased baking tray and cook in a hot preheated oven 240°C fan for 15 mins until the chicken is slightly charred on the outside.
Enjoy with a fresh yogurt dip, lemon wedges and sliced onions.

Cooking Methods
Oven Method (Recommended):
Preheat to 240°C fan. Cook for 15 minutes until slightly charred.
Barbecue Method:
Thread onto skewers and grill over high heat for 10-12 minutes, turning occasionally.
Air Fryer Method:
Cook at 200°C for 12-15 minutes, shaking halfway through.
