Lazy Lamb Chops - Quick & Delicious

These lazy lamb chops are just the thing for a rainy evening like today — ready in minutes (plus marination time ☺️)

Ingredients (Serves 4)

  • 8 lamb chops
  • ¼ tsp ginger purée
  • ¼ tsp garlic purée
  • ¼ tsp ground turmeric
  • ½ tsp ground black pepper
  • ½ tsp ground fennel (use a coffee grinder, a pestle and mortar or just use the back of a rolling pin to make your own)
  • ½ tsp ground garam masala
  • ½ tsp salt
  • 2 tbsp cooking oil
  • Juice of half a lime

Method

1. Combine all the ingredients in a mixing bowl and set aside to marinade for 30 mins.

2. Heat a pan on medium-high until hot. Fry the marinated chops for 2-4 mins on each side depending on how you like your meat cooked. Using a flat spoon, press down each chop for about 30 seconds on each side just before you are about to remove them from the pan, to get those brown crispy bits.

Serve with a simple mint raita (onion bhajjis and pulao rice ☺️).
