Spiced Vegetable Stir Fry - Quick & Easy
If there's one spice blend you need in your kitchen, it's the Signature Spice blend.
Although I enjoy cooking from scratch, I also love a shortcut, and you can literally use it in anything you'd like to give a spicy kick, not just curry. The best part? You can use as little or as much as you like!
Ingredients (Serves 2)
- 1 tbsp oil
- 1 tsp cumin seeds
- 2 dry red chillies
- 2 potatoes, chopped
- Leftover peppers (or any vegetables you have)
- 1 tbsp Signature Spice blend
Method
1. Heat 1 tbsp oil in a pan. Add cumin seeds and dry red chillies. Let them sizzle for a few seconds.
2. Add the chopped potatoes and leftover peppers (or any vegetables you have).
3. Add 1 tbsp of theΒ Signature Spice blend. Mix well to coat the vegetables.
4. Cover and cook for 15 minutes until the vegetables are tender.
5. Remove the lid and brown the potatoes for another 5 minutes.
